The majority of our raw materials come from Thailand, we only use natural casings which allow the sausage to mature slowly. The andouillettes, white ham and Bayonne ham are imported products, some of our casings are purchased in Thailand but come from New Zealand or Europe.
We don't use Nitrite and Nitrate additives in our productions The natural white molds on the skins of our dry products add flavor over time, controlling the acidity of fermentation and producing a richer and more delicate flavor. The know-how of our master butchers in filling the chambers refining allows them to produce these molds without additives. Can you eat the skin of dry sausage? Of course ! you can eat it, all our casings are natural. it is best to keep them to fully enjoy the taste experience.
