Spanish croquetas, or croquettes, are small cylinders or ovals of fried dough, usually stuffed with creamy béchamel and various ingredients such as ham, chicken, fish, mushrooms or spinach. They are then breaded in breadcrumbs and fried until golden and crispy on the outside.
